Easy Vegan Tofu Dates Pudding


Remember the tofu dates cheesecake recipe? Well this recipe is similar, the only difference is that this is a pudding. All I did was just turn the cheesecake filling into a pudding! It is really easy and delicious! But you’ll need a little patience if you got a cheap blender. You’ll have to stop in between blending and scrape along sides. I sprinkled chia seeds and raisins on top. This is literally fat free! How epic is that?! I wish I can say this recipe is 100% raw, but unfortunately tofu isn’t raw:( But that’s ok. I won’t fret over it. I enjoy me some tofu;) But I am very proud to say that this recipe IS 100% GUILT FREE!;) Plus, this is healthy for you:) I’mma let you in on a little secret…. if you add chia seeds, you’ll be losing weight!;)

* Serves about 2-6
1 package organic non-gmo tofu (not raw-you could use soft, firm, or extra firm)
10 pitted Medjool dates (16-20 regular)
Heaping handful raisins

1 tbsp chia seeds
Fresh fruits of choice
Nuts of choice

* Drain the water out of the tofu package. Place tofu on napkin and pat dry. Place the tofu, dates, and raisins in the blender. Blend until creamy. Check to taste for sweetness and adjust to your sweet level. (I prefer mines really sweet, so I add more dates and raisins;) Place your mixture into your serving glass or bowl and garnish with chia seeds, extra raisins, and nuts of choice. Enjoy!


* This will last about 3-4 days fresh in the fridge. You can store any leftovers in a bowl in the fridge. It may last a bit longer though.
